2 oranges
1 fennel bulb - Finely Sliced (I use a mandolin - very carefully)
1/2 medium red onion, finely sliced
1 tbsp loosely packed parsley leaves
Orange Dressing
50ml olive oil
40mls fresh orange juice - Or juice from 1 orange
1 tsp wholegrain mustard
Salt & ground black pepper
Rind from 1 Orange
